Oatmeal Chocolate Chip and Bean Cookies

These cookies have a low-fat secret. They’re full of beans! This recipe has been adapted from Idaho State University researchers in Pocatello. This recipe replaces 75 percent of the butter with beans and applesauce to create cookies with fewer calories and fat.

1 ½ cups old-fashioned oats

¾ cup drained and rinsed great Northern white beans

¼ cup applesauce

1 Tbsp. water

3 Tbsp. butter, softened

1 cup firmly packed light brown sugar

2 large eggs

1 tsp. pure vanilla extract

¼ tsp. butter extract

2 cups all-purpose flour

½ tsp. baking powder

½ tsp. baking soda

¼ tsp. salt

1 ¼ cup milk chocolate chips

Decorative Piping

½ cup milk chocolate chips

1. Pre-heat oven to 375ยบ.

2. Line baking sheets with parchment paper. You will have to borrow cookie sheets and jelly roll pans from one of the kitchens doing muffins. Remember to return the pans to the correct kitchen.

3. In blender, process oats until finely ground but not powdery. Pour the oats into a separate bowl and combine with the flour, baking powder, baking soda and salt.

4. In the blender, puree the beans, ¼ cup applesauce, 1 Tbsp. water, eggs, vanilla and butter extract.

5. In your KitchenAid mixer, cream the sugar, butter, and the above pureed mixture (scrape out your blender thoroughly) and beat well.

6. With mixer on low speed, mix in the oat and flour mixture.

7. Gradually stir in the milk chocolate chips.

8. Using the small spring-loaded cookie scoop, drop dough by spoonfuls on prepared cookie sheets. Using a wet hand, press the dough to the thickness of the chocolate chips.

9. Bake for 8-10 minutes, or until golden brown.

10. Cool slightly before putting on cooling rack. You may need to put the cookies in the freezer in the dispensary so that they will cool on time.

Decorative Piping

11. After the cookies are completely cooled, gradually melt the ½ cup milk chocolate chips in the microwave in 30 second intervals in a FREEZER zip-lock bag. The chocolate chips should NOT become warm – only to the warmth of your hand – a total of 1 minute should do it. Massage the chip with your hands between the 30 second intervals.

12. Snip a SMALL corner off (toothpick size) and pipe the melted chocolate in a zig-zag pattern on the tops of the cooled cookies. Place the decorated cookies in a cold place for the chocolate to set.

Orange Cranberry Nut Muffins

Makes 48 mini muffins – bake without liners

2 c. flour

1 ½ tsp. baking powder

½ tsp. baking soda

1 tsp. salt

¼ c. shortening.

1 c. orange juice

1 c. sugar

1 Tbsp. orange zest (show zester)

1 egg (beaten)

1 to 1 ½ c. chopped walnuts

1 c. dry cranberries (coarsely chopped)

1. Combine dry ingredients in a mixing bowl and thoroughly mix them together.

2. Cut the shortening into the dry ingredients until the shortening is about the size of un-popped popcorn kernels.

3. Combine and orange juice, sugar, orange zest and beaten egg.

4. Stir the liquid ingredients into the dry ingredients. Stir until just combined. DO NOT over mix.

5. Fold the chopped nuts and the cranberries into the batter.

6. Spoon into well-greased muffin cups and bake in a preheated oven at 325° for 10-14 minutes or until golden brown. For big muffins, bake at 350˚ for 20-30 minutes.

***TIP – When using non-stick cooking spray on muffin tins, wipe the top surface clean before baking.***

7. Allow muffins to sit in the pan for about 5 minutes before removing them.

Chicken A La King

Take a chicken breast, cook it, and then dice it

3 cups of veggies (mixed, peas, corn, whatever!) and cook it in a sauce pan

1/2 c margarine
1/2 c flour
1 1/2 cups milk
1 1/4 hot water
1 1/2 tsp chicken bouillon

Once the veggies are cooked, add the rest of the ingredients and let it simmer to a boil. It will slowly thicken.

Add salt, pepper, paprika, garlic salt

Let continue to simmer

One to desired thickness, add the cooked, diced chicken

Stir all together and let cook for a couple of minutes.

Serve over toast or biscuits!

Hello Dolly's

1/2 c melted butter
1 1/2 cups graham wafer crumbs
1 1/2 cups flake coconut
1 cup walnuts
1 can condensed milk (eagle grand)
1 cup chocolate chips

Combine butter and wafer crumbs and pat on bottom of 9x13 pan. Then put in layers, the coconut, walnuts, and chocolate chips. Pour the condensed milk over top. Bake at 350 for 30 minutes.

Cool and cut!

Chocolate Cake

CREAM:
1/2 c margarine
2 c sugar
1/2 c cocoa
2 tsp vanilla
* Beat in 2 eggs

ADD:
2 1/2 c flour
2 tsp baking soda
2 tsp baking powder
1 tsp salt

Blend this into cake batter until moist

ADD:
2 cups of BOILING water and beat until blended (About 1-2 minutes)

Bake in a large pan at 350 for 1/2 hour

If you are doing cupcakes, it will make about 30 and cook them for only 20 minutes

** The batter will seem very runny

No Bake Cheese Cake

1 1/2 c. graham crumbs
1/3 c melted butter
4 T sugar

* Mix this all together and press firmly in the bottom of pan

1 8 oz pkg of cream cheese
1 c icing sugar
1 t vanilla

* Mix together will beater until smooth and creamy

Make 1 cup of whipped cream

** FOLD together the whipped cream and cream cheese mixture
Put on top of graham cracker

1 can of any type of pie filling -- add a dash of almond extract

Put fruit on top of cream cheese mixture

Pressure Cooking Chili

3 lbs stew meat (beef, pork, lamb)
2 t peanut oil
1 1/2 t kosher salt
1 can beef broth
1 (16 ounce) container salsa
30 tortilla chips
2 chipotle chiles in adobo, chopped
1 T adobo sauce (from the chipotle peppers in adobo)
1 T tomato paste
1 T chili powder
1 t ground cumin

Directions:
- Place the meat in a large mixing bowl and toss with the peanut oil and salt. Set aside.
- Heat a 6-quart heavy-bottomed pressure cooker over high heat until hot. Add the meat in 3 or 4 batches and brown on all sides, approximately 2 minutes per batch. Once each batch is browned, place the meat in a clean large bowl.
- Once all of the meat is browned, add the beef broth to the cooker to deglaze the pot.
- Scrape the browned bits from the bottom of the pot. Add the meat back to the pressure cooker along with the salsa, tortilla chips. chipotle peppers, adobo sauce, tomato paste, chili powder, and ground cumin and stir to combine. Lock the lid in place according to the manufacturer's instructions. When the steam begins to hiss out of the cooker, reduce the heat to low, just enough to maintain a very weak whistle. Cook for 25 minutes. Remove from the heat and carefully release the steam. Serve immediately.

Pulled Pork Sandwiches - Pressure Cooker or Crock Pot

2 lbs pork tenderloins
2 cups beef broth
1/2 c water
1 t salt
1/2 t black pepper
1/2 c yellow onion, chopped
16 ounces tomato sauce
1 T spicy mustard
2 T brown sugar
1 T worcestershire sauce
6 large sandwich buns

Directions:
- Place pork in the cooking pot and set to "brown". Saute the pork, turning until the pork is browned on all sides.
- Add the beef broth, water, salt, pepper, and onions, and set to high pressure. Cook for 45 minutes. Use quick release method to release the pressure.
- Remove the lid and check that the internal temperature of the pork is 170-175 degrees F. If not, bring to high pressure again and cook an additional 5-10 minutes
- Remove pork and pull apart into shreds, using two forks. Discard remaining liquid from pot.
- Place the tomato sauce, mustard, brown sugar, and worcestershire in cooking pot and set to "brown". Stir and cook 4-5 minutes or until warmed throughout and sugar is melted. Add pork, mix with sauce and heat through
- Spoon pork and sauce onto sandwich buns and serve.


Pressure Cooker Saucy Baby Back Ribs

SERVES 4 -6
• 3 lbs beef back ribs
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1/2 teaspoon onion powder
• 1/4 teaspoon garlic powder
• 1/4 teaspoon paprika
• 2 tablespoons olive oil
• 1 cup ginger ale
• 12 ounces barbecue sauce
1. Cut ribs into serving pieces.
2. Mix spices together to create a dry rub. Apply the dry rub to the ribs.
3. Heat oil in pressure cooker and brown the ribs on all sides.
4. Insert cooking rack in pressure cooker, add ginger ale, and load with ribs, not to exceed manufacturer's maximum fill
line.
5. Place over high heat until control jiggles. Reduce heat and cook 35 minutes.
6. Let cooker depressurize naturally. Remove rack from cooker (you can drain some of the liquid if you like thicker
sauce) and add barbecue sauce, heat until simmering. Simmer for 10-15 minutes.

Sticky Chicken

-Use boneless chicken breasts or tenderloins (use enough to fit a 9x13 pan)
-1 egg
-Roughly 1 c. flour

Sauce:
-1 c. sugar
-3 T water
-3 T soy sauce
-1/2 c. vinegar
(may altar sauce to give a stronger flavor by adding less water, more soy sauce, or a combination of both. Recommended!)

Directions:
Egg and flour each piece of chicken and brown in a frying pan on medium heat. Put in glass baking dish.
Pour sauce over chicken and bake 30-60 minutes, or until chicken is done (depending on size of chicken pieces). Cook at 350 degrees.
Serves: about 4-5

Stuffing


2 c margarine (melt)
2 cans mushroom soup
*Mix together
1 heaping T poultry seasoning
1 scant T sage
2 t salt
1/2 t pepper
* Cook in saucepan on stove

In a big bowl:
bread crumbs + celery + onions

Pour in the bowl the mixture in the sauce pan

After all mixed, add enough water to make it stick

Bake in cake pan for about one hour @ 350-375

This stuffing is one of my most favorite foods in the entire world! I have so many memories of stuffing while growing up. All I ever wanted was stuffing. For one of my birthdays all I wanted was a turkey dinner so that I could have stuffing. So my mom invited all my family over and made a turkey dinner for everyone (little did I know how much work that was for her...)

Another memory I have is that I would always fight over the stuffing with my cousin Booker. He loves stuffing ALMOST as much as I do. So finally grandma just would make us our own bowls when we had stuffing.


Icing

1/3 c softened margarine
2 T milk
1/2 t vanilla - or- 2 t cocoa for chocolate
1/2 c icing sugar

* mix

then add more icing sugar to be able to spread

Play Dough

1/2 c salt
1 c flour
1 T vegetable oil
1 c water
2 t cream of tarter

Method:
- Put all ingredients in a sauce pan
- Mix
- Cook until it leave the side of the pan and forms a ball
- Knead until soft and smooth
- Color with food coloring
- Store in an air tight container

Caramel Icing

Melt 1/2 c of butter, stir in 1 c brown sugar.
Boil and stir over heat for one minute.
Stir in 1/4 c of milk.
Bring to a boil stirring constantly.
Cool. Gradually stir in 1 3/4 c to 2 c of icing sugar.
Spread while still warm.
Enough for 9x12 cake

Maple Syrup

2 c white sugar
1 c boiling water
1/2 t maple flavored extract

Pizza Dough

4 1/2 c flour
2 t salt
1 T sugar
1 T oil
1 T yeast
1 3/4 c water

* Mix together and let rise for 20 minutes

* Then roll out and make into pizza!!

Banana Cake

Bowl One:
1/2 c margarine
1/2 c white sugar
2 eggs
** Cream
2 t baking powder
2 c flour
1/4 t salt

Bowl Two:
1-2 bananas

Stir into Bowl Two:
4 T hot water
1 t baking soda

Alternate dry and bananas until mixed together

Bake @ 350 for 25-25 minutes

Icing:

1/4 c margarine
1/2 c brown sugar
2 T milk

*Put on stove until it starts to boil

Take off stove and add 3/4 c of icing sugar

* pour on top of cake while still hot



Apple Scones

2 c flour
2 t baking powder
1/2 t salt
1/4 c sugar
1/2 t baking soda
1/4 c cold margarine

*Mix in a large bowl. Cut in margarine until crumbly

Add: 1 shredded apple and 1/2 cup of milk

Stir to form soft dough. Roll out on lightly floured surface. Kneed gently 8-10 times. Roll out - cut into circles with glass. Place on greased cookie sheet. Bake @ 425 for 15 minutes until browned and risen. Serve warm w/ butter.

Sweet & Sour Hamburgers

1 lb hamburger
1 egg
1/2 c oatmeal
1 shredded carrot
1 T sugar
salt & pepper

** Mix together and form patties
** Grill or fry

1 can of tomato soup
1/2 c brown sugar
1/2 c water
2 T water

**Heat together in sauce pan

Pour over rice

Chicken & Broccoli


2 cups diced, cooked chicken
1 can of chicken & broccoli campbell's soup
3 cups cut up broccoli
1 cup cut up mushrooms or 1 can of cream of mushroom soup
3 T mayo
1 t mustard
1 c milk

** Put all ingredients into frying pan and cook until broccoli is done. Eat over Rice

Japanese Chicken

8-10 chicken thighs or drumsticks (can take out bone and skin off).
mix flour, salt, and pepper in one dish.
Mix 2-3 eggs beaten in another dish.
Dip each piece of chicken in the egg and then into the flour.
Fry until lightly browned.
Put into baking dish.

Pour over chicken:
2 tbsp soy sauce
2 tbsp water
3/4 cup sugar
1/4 cup vinegar
1/2 ts salt

** Mix together and bring to a boil

Bake chicken 1 - 1 1/2 hrs @350. Turn over once during the baking time so sauce is on both sides.


Blue Plate Diner - Mac and Cheese

1 16 oz pkg of large elbow macaroni

Cook in boiling salted water until al dente

Meanwhile:
Saute the ingredients below in olive oil until onions are transparent.

1 tbsp olive oil
1/2 cup chopped bacon
1/2 cup chopped onion
1/2 tsp salt
1 clove of minced garlic
2 tsp Italian Seasoning

Add to the sauteed mixture:
1 cup of fresh sliced mushrooms
Steams with lid on pan for about 10 minutes until soft.

Sauce:
1/4 cup chopped onions
1 minced garlic
2 tbsp butter
1/4 cup flour

Saute onions and garlic in butter until soft. Add flour

When flour is coated with the mixture add:
3/4 cup chicken broth
1 1/2 cup cream

Bring to a boil (You can add more flour if you like your sauce thicker)

Remove from the heat and add:
1 cup shredded Pepper Jack Cheese
Stir until it melts. Add cooked noodles to this mixture.

Sprinkle with 1/4 cup breadcrumbs and place under the broiler until the top crisps and browns.

SERVE

Sweet & Sour Meatballs

1 can pineapple chunks, in juice
1/4 cup brown sugar
1 1/2 tbsp cornstarch
1/2 cup water
3 tbsp vinegar
1 1/2 tsp soy sauce
1/4 tsp mustard
1 beef bouillon cube or 1 tsp instant beef bouillion powder
1 batch of meathballs w/ garlic salt
3 cups cooked rice

Method:
- drain pineapple, saving syrup
- combine pineapple syrup, brown sugar, cornstarch, water, vinegar, soy sauce, mustard, and bouillon cube
- cook and stir until thick
- add meatballs
- cover, simmer until all ingredients are hot
- serve over hot rice
- makes 4 servings

Blueberry Muffins


2 1/2 cups flour
3/4 cups sugar
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt

** cut in 1/2 cup butter

Then add:
1/2 can frozen orange juice
1/2 cup milk
2 eggs
2 tsp grated oranges rind

Mix gently

Add 1 1/2 cups blueberry

Bake @ 350 for 20-25 minutes

Topping:
1/4 cup butter
2 tsp orange juice
1/2 cup sugar

**Dip while warm

Sunday Buns

1/4 cup soft margarine
1/4 cup sugar
1 tsp salt
1 heaping tbsp yeast
1 egg
1 cup warm water
1 cup warm milk

** Mix the water and milk together with the yeast before putting it with everything else

Add flour -- start with 3 cups and go to about 5

Bake @ 400 for 18 minutes

White Bread


1/2 cup melted margarine
1/2 cup sugar
2 tbsp salt
3 tbsp yeast
2 cups cold milk
4 cups hot water

**Enough flour to make dough (usually around 8 cups -- but varies)

Bake @ 400 for 30 minutes

The thing to remember when making this bread recipe is to know that the number of cups of liquid you have, that's how many loaves you will have. For example this recipe calls for 6 cups of liquid, so you know that you will come out with 6 loaves.

I had a love-hate relationship with this recipe for a lot of years. I loved eating it and it is my favorite kind of bread. But it was so hard for me to learn how to make. I felt like I could never get it right and I just messed it up all the time. I would always feel so bad that I just had to throw away and waste all those ingredients. The thing that bugged me the most is that my mom would never tell me how many cups of flour to use. She would just use flour until it was the right consistency. This just made me so mad. However, since my years of moving away from home and being on my own, I have finally mastered this recipe.. and the truth is, I have no idea how many cups of flour I use..

Taco Soup


1 pound of hamburger -- browned
1 2oz can of crushed tomatoes
1 can corn
1 can of pork n beans
1 14 oz can of tomato sauce
1 pkg of taco seasoning
1 cup water

** Simmer 20-25 minutes

Serve with tortilla chips, sour cream, and grated cheese

Taco soup reminds me of my family. Whenever there was going to be lots of us and my mom didn't have time to make a "nice" meal, she could always whip out taco soup. It's a huge family favorite and can easily feed 60 people. We have done it many times. Taco soup brings back many memories of camping with my family. We camp a lot and therefore have a lot of taco soup!

Funeral Potatoes

1 cup hash browns
1 cup sour cream
1/2 cup melted butter
1/2 cup chopped onion
2 cups grated cheese
1 can cream of chicken soup
2 cups crushed cornflakes
1/2 cup melted butter
Sal & Pepper

** Bake at 350 for about 1 1/2 hours in a 9x13 pan

Shepard's Pie

Bottom Layer:
- hamburger (leftover roast), onions, celery, salt, pepper --> brown in frying pan
- add leftover gravy or 1 can of mushroom soup & 1/4 can of milk

2nd Layer:
- 1-1 1/2 cups of warmed up vegetables

3rd Layer:
- instant or leftover mashed potatoes

4th Layer:
- grated cheddar cheese

** Bake in oven @ 350 until warmed through and cheese melts

Glorified Hamburgers

* Fry hamburgers first

Sauce:
- 1 cup ketchup
- 3 tbsp vinegar
- 1/4 cup brown sugar
- 1 medium onion -- chopped fine
- 1/2 cup water

** Pour the sauce over the burgers and take at 350 for 1/2 hour

When I think of glorified hamburgers, my mouth just starts to water. MMM! Oh I love them. These remind me of summer and all our barbecues that we had at the lake. My family loves to just wake up and go to the lake and be there all day long! And the best thing is that we sometimes get glorified hamburgers. They just simmer in the sauce and all you need is a bun!
Enough said.

Baking Powder Biscuits

2 cups flour
4 tsp baking powder
1/2 tsp salt
3 tbsp lard
2/3 cups milk

Method:
- blend flour and baking powder
- cut in lard
- add milk and blend slightly

* May be rolled out and cut -- or -- dropped from a spoon depending on the amount of milk added

* Bake @425 for 15 minutes

Sugar Cookies


3/4 cup softened margarine
1 cup sugar
2 eggs
1/2 tsp vanilla

** CREAM TOGETHER

2 1/2 cups flour
1 tsp baking powder
1 tsp salt

** Chill in fridge

** Bake @400 for 6 minutes

Icing:
- 1/4 cup softened margarine
- 2 tbsp milk
- 1/2 tsp vanilla
- 1/2 cup icing sugar

**Whip good

Oreo Cookies

1 pkg of dark chocolate cake mix
2 eggs
1/3 cup oil

Mix well and roll into small balls. Place on cookie sheet (cookies will spread) and bake @ 350 for 9-10 minutes (no longer)

Filling:
- 3 oz cream cheese
- 2 cup icing sugar
- 2 tbsp soft butter
- mix well with mixer and spread on 1 cookie and cover with another

Oreo Ice Cream

2 liters of mint chocolate chip ice cream ** softened
1 large pkg cool whip ** thawed
1/2 pkg 400 gm oreo cookies

Crumble whole cookies in large bowl. Add ice cream and cool whip. Stir together and pour into 9 x 13 pan. Garnish w/mint patties if desired.

Freeze overnight

Fruit Pizza



Dough:
- 1/2 cup margarine
- 1/2 tsp vanilla
- 1/8 tsp salt
- 1 1/2 tsp baking powder
- 1/2 cup sugar
- 1 beaten egg
- 3 tbsp milk
- 1 1/2 cups flour

** Mix together and bake 12-15 minutes @ 375, cool

Mix together 1 -8oz pkg cream cheese and 1/2 cup sugar and spread over cooled dough. Arrange fruit (strawberries, peaches, kiwis, bananas, grapes, etc.)

Glaze:
- 1/2 cup sugar
- 1/2 cup water
- 1/2 cup orange juice
- 1 1/2 tbsp cornstarch

** Cook till bubbly then drizzle over fruit

Skor Cake

Bake 1 German chocolate cake in a large cookie sheet
Mix 1 small pkg instant chocolate pudding and 1 small pkg instant vanilla pudding w/ 3 cups of milk
Spread over cooled cake
1 1/2 cups of cream and spread over pudding
Break 3 skor chocolate bars into small pieces and sprinkle over whip cream

Rice Pudding


use an 8 cup baking dish

1 cup of rice

3/4 cup of sugar

shake in as much cinnamon as you want.

add 5 cups of milk

stir it up so the sugar is dissolved.

Bake at 350 for about 2 hours.

sometimes I stir it abit while it is cooking so it does not get a scum on top.

When the rice is cooked - taste it - take out of the oven

add as many raisins as you want and let cool.

I add milk to help cool it quicker - sometimes about 2 or 3 cups depending how thick it is.

Rice pudding is a huge family favorite and one of my favorite things to come home and eat after school. When I was growing up, I loved seeing rice pudding on the stove when I got home. It makes for the best snack ever! I now make rice pudding all the time and it has turned into a good breakfast food for Jord and I.

Pumpkin Pie


425 Degrees - one 9 inch pan
2 eggs, slightly beatne
1 1/2 cups cooked or canned pumpkin
3/4 cups sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp cloves
1 2/3 cups evaporated milk or half-half cream
Method:
- In a large bowl combine all filling ingredients in order given
- Pour into pastry shell
- Bake at 425 for 20 minutes
- Reduce temp to 350 and continue baking for 50 minutes or until knie inserted inot center of pie filling comes out clean
- cool
- serve with whip cream!!

Chocolate Zucchini Cake

3/4 cup oil
3 eggs
1 1/2 cups sugar
2 cups grated zucchini
2 tsp vanilla
1/2 cup milk

** Mix Together

1/2 cup cocoa
2 1/2 cups flour
2 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 tsp cinnamon (optional)

** Mix Together

Bake at 350 for 35-40 minutes

GumDrop Cookies

1 cup margarine
1 cup brown sugar
1 cup white sugar
2 tsp vanilla
1 tsp baking soda
2 cup flour
1 tsp baking powder
1/4 tsp salt
1 cup coconut
1 cup gumdrops (fruitlets)
2 cups oats
2 eggs, well-beaten

** Bake at 350 for about 10 minutes

White Chocolate Chip Cookies

1 cup margarine
1 cup sugar
1/2 cup packed brown sugar
1 tsp vanilla
2 eggs
2/3 cup cocoa
2 cups flour
1 tsp baking soda
1 tsp salt
1 cup white chocolate chips

** Bake @ 350 for 10 minutes -- let sit on pan a couple of minutes before putting on rack

Banana Cream Pie


1 cup sugar
4 1/2 tbsp corn starch
1/2 tsp salt
2 2/3 cups milk
4 egg yolks
4 tbsp butter
1 tsp vanilla
2 sliced bananas
whip cream

Method:

- Prepare and bake single pie shell
- Combine sugar, corn starch, and salt
- Gradually add milk
- Cook until thickened (ten minutes)
- Slowly add slightly beaten egg yolks
- Cook for 5 more minutes
- Remove from heat; add butter and vanilla
- Place sliced bananas over bottom of pie shell
- Pour filling over it, let it stand in fridge
- Cover with whip cream

Granola

8 cups rolled oats
½ cups whole wheat flour
2 TB cinnamon
¼ cup slivered almonds
1 cup raisins
1 cup coconut
1 bag chocolate chips
1 tsp almond flavoring
2 cups honey
2 TB maple flavoring
½ tsp salt
2 TB vanilla



Mix oats, flour, cinnamon, almonds, raisins, coconut, and choco chips together in large bowl. Separately mix honey, salt, and flavoring together. Pour over dry ingredients. Spread on large cookie sheet and bake at 400 for 7-10 minutes.

Puffed Wheat Squares


A Special Canadian Treat!
1/3 cup of margarine
1/2 cup of cane syrup
1 cup brown sugar
1 TBSP cocoa
1 tsp vanilla
8 cups of puffed wheat
METHOD:
- Melt butter in sauce pan
- Add cocoa, syrup, sugar, and vanilla
- When mixture beings to boil remove from heat
- Mix in puff wheat
- Put in well buttered 9 x 12 pan
- Press down and cut into squares
This is a great on the go treat -- at the lake, camping, hiking, or just for fun!!

These remind me of my Aunt Kris. It seemed like she always was making them and she could always make them the best! They were always soft and chewy. One day I will be able to make them as good as her.

Peanut Butter Cookies

1/2 cup of margarine
1 cup of brown sugar
1/2 cup of peanut butter
1/2 tsp salt
1 egg
1 tsp baking soda
1 1/2 cups flour
METHOD:
- Blend margarine, sugar, peanut butter, and egg
- Add combined dry ingredients and blend well
- Form walnut size balls and make a criss-cross with a fork
Bake @ 375 for 10-12 minutes
** Cool on a cookie sheet for 3-4 minutes before putting on cooling rack

Brownies

4 eggs
3/4 cup of Margarine
2 tsp vanilla
** Cream this mixture together
2 cups of sugar
1 1/2 cups of flour
1 1/2 tsp salt
1/2 cup of cocoa
** Blend this together and then add to the creamy mixture
** If you really want to add a kick, I love to add small marshmallows and chocolate chips!!
Bake @350 for 30 minutes

Just a little story about these brownies. When I was little, I desperately wanted to learn how to bake. But I didn't want to follow a recipe. I wanted to create something on my own. I went through a phase that lasted about a month where I made some pretty nasty things! Nothing turned out good and I was getting pretty discouraged. Well my mom gave me the idea of using a recipe as my base and then adding things to make it my own. I thought this was a great idea. So the whole adding marshmallows and chocolate chips to this brownie recipe was my own creation when I was little. Hope you enjoy!

Bake @ 375-400 for 8-10 minutes

These cookies are famous at our house and everyone loves them! We have a day called Cookie Wednesday and my mom makes these coookies every Wednesday. All the cousins and kids in town know it and just randomly show up at our house on Wednesdays. The lunch boys especially loved them and mom was so good to bake them every tiem for the boys.
